Vegan Smores Brownies

Hey guys! The weather here is COLD. We know its fall but it feels like we went from SUMMER straight to WINTER. My goodness! Anyway today we are making smores brownies; and what's better then graham crackers, chocolate, and marshmallows?! Nothing ! I hope you guys these brownies :-)



Shopping List


Brownies

  • 4 vegan eggs substitutes of your choice

  • 1 tsp baking powder

  • 2 cups vegan chocolate chips

  • 1 1/4 cups Dutch process cocoa or cocoa powder

  • 1 1/2 cups all purpose flour

  • 1 tsp salt

  • 2 1/4 cups cane sugar

  • 1 tbsp. pure vanilla extract

  • 1 cup butter

  • 10 oz. bag vegan marshmallows

Graham Cracker Crust

  • 1 1/2 cups vegan graham crackers crumbs

  • 1/3 cup cane sugar

  • 6 tbsp. vegan butter melted


Directions

  1. Preheat oven to 375 degrees F.

  2. While oven is heating up combine graham cracker crumbs, cane sugar, and melted butter. Stir until combined.

  3. Place graham cracker mixture into the 9 in. square pan ,press down firmly to insure it is a even layer.

  4. Bake for 7 minutes.

  5. Set aside when finished, and heat oven to 350 degrees F.

  6. In a small bowl, mix the egg substitute of your choice together and set aside.

  7. In large bowl place the flour, cocoa powder, and salt. Stir to combine.

  8. Meanwhile melt the butter in a small saucepan over low heat. Add 1 cup of chocolate chips. Remove from heat, stir until smooth and melted completely.

  9. Next add cane sugar and vanilla extract, stir to combine. Afterwards add the chocolate butter mixture, and egg substitute into the dry ingredients.

  10. Add in the remaining chocolate chips .

  11. Fold in all ingredients until combined. Spoon the batter into the square pan and spread with spatula, so the layer is even.

  12. Baked the brownies for 30 minutes. ( Place a toothpick into the center, if it comes out clean, remove from oven)

  13. While brownies are in the oven prepare the marshmallow topping. Melt 3 tbsp. of butter on stovetop in saucepan.

  14. Then place vegan marshmallows in saucepan to melt. When melted & stretchy pour on top of the cooked brownie. Use spatula to spread evenly if needed.

  15. Place brownies to broil in oven on LOW for 5 minutes. The top of the marshmallows will start to brown. Be sure to watch them, so it doesn't burn.

  16. Allow brownies to cool, then cut into squares and enjoy!
