2 1/2 cups vital wheat gluten
1/4 cup garbanzo bean flour
1/4 cup nutritional yeast
1/2 cup red onion, chopped
2 garlic cloves
1/2 cup black beans
1 TBSP. tomato paste
1 TBSP. vegan worcestershire sauce
1/2 cup vegan red wine
1 chipotle pepper in adobo
1 TBSP. no beef bouillon
2 TBSPS. liquid aminos or soy sauce
1/2 cup no beef or vegetable stock
1/2 tsp. sea salt
In a large bowl, combine vital wheat gluten, garbanzo bean flour, and nutritional yeast. Stir to combine and set aside.
Heat 2 TBSPS of oil in a medium pan and sauté red onion and garlic on medium heat until fragrant and translucent.
Add red onion and garlic to high speed blender, along with the no beef stock, black beans, red wine, chipotle pepper in adobo, tomato paste, vegan worcestershire sauce, no beef bouillon, liquid aminos, and sea salt. Blend until combined.
Pour the wet mixture into the dry mixture, and stir until its combined, and a stiff dough forms.
Use your hands and continue to knead the dough continuously for 10- 15 minutes to form a firm dough.
Break off, about 5/6 pieces into balls. These will become the "steak".
Roll out, and flatten each "steak" . Be sure sure to get all the air out of each one, and shape to your liking.
Wrap each "steak" individually into foil paper, tightly.
Add wrapped steak to a steamer and steam for 1 hour.
Immediately place in freezer for at least 8 hours or overnight preferably. This will help the texture be meat- like.
Thaw and defrost before using.
