active dry yeast
5 TBSP softened vegan butter
2 vegan eggs- egg replacer
1 tsp sea salt
3 1/2 cups unbleached all purpose flour
7 TBSP vegan butter
1/4 cup plant- based milk
2 tsp vanilla extract
1 1/2 cup brown sugar
6 TBSP softened vegan butter
1 cup brown sugar
2 TBSP cinnamon
In a large bowl add cane sugar, 1 cup warm plant- based milk. Whisk together until sugar is dissolved.
Immediately sprinkle active dry yeast and let it sit for 5 minutes. ( Follow the directions on your active dry yeast package)
Add vegan eggs, softened vegan butter, sea salt and 1/2 cup flour. Whisk together.
Add in another 3 cups of flour. ( Add in 1/2 cup increments, so it is easier to combine)
Knead the dough on a lightly floured surface until a ball forms, about 3/4 minutes.
In a large bowl, add 2 TBSP oil. Place the ball of dough into the bowl, and rub all sides with the oil.
Using a clean kitchen towel, cover bowl and place in a dark area ( i.e. oven/ microwave) for 2 hours.
On medium- low heat, add 7 TBSP of vegan butter, 1 1/2 cup brown sugar, 1/4 cup plant- based milk, and 2 tsp vanilla extract to a medium pan. When the sugar dissolves, and the caramel begins to come to a simmer it will begin to thicken. Remove from heat and pour into the baking pan that you will making the cinnamon rolls in.
After two hours, the dough should have risen and doubled in size. Lightly flour your surface and begin to roll out dough into a rectangle.
Place softened vegan butter all over the dough, leaving 1 inch on the bottom free of butter so the cinnamon rolls can be sealed.
In a small bowl combine the brown sugar, and cinnamon together for the filling. Spread this mixture evenly over the butter. Be sure to press it down so it doesn't fall out the cinnamon rolls.
Roll, tuck and tighten the cinnamon rolls to ensure it doesn't expand while rolling. Pinch the ends to close securely.
Cut into 12 rolls and place on top of caramel sauce.
Bake on 375 F. for 30- 40 minutes. or until golden brown.
Brush with more butter when they are done, so they can remain soft.
Place a large baking sheet/ cookie sheet on top of the baking pan with the cinnamon rolls and flip it onto the cookie sheet. Separate the cinnamon rolls and serve.
Tip: Use thread to cut the cinnamon rolls into perfect circles!
