Lemon Poppy & Sesame Seed Cookies

Today we are making cookies! AND these are NOT your grandma's lemons cookies (though I'm sure grandmas cookies were a hit). These poppy & sesame seeds, along with the subtle lemon flavor is what make these cookies so good.
These cookies are chewy and so delicious… maybe we're biased because we made them. BUT we promise you will enjoy!
2 cups all purpose flour
1/2 tsp sea salt
1/2 tsp baking soda
1 heaping tsp lemon zest
2 tbsp. poppy seeds
2 tbsp. sesame seeds
3/4 cup vegan butter, softened
1 cup cane sugar
3 eggs replacer eggs ( Bob's red mill, vegan egg, flax seeds, etc.)
1/4 tsp lemon extract
Preheat oven to 300 F.
In a medium sized bowl, whisk together the flour, sea salt, baking soda, lemon zest, poppy & sesame seeds.
In a large mixing bowl, cream the butter and sugar together. When it is well combined, add in the egg replacers and beat until fluffy. Next, add in lemon extract and beat again.
Stir in the flour mixture into butter and sugar mixture, just until combined.
Line a baking sheet with a reusable silicone mat or parchment paper. Using a cookie scoop to scoop the dough onto the baking sheet.
Bake for 20- 25 minutes or until lightly browned on the edges.
Let the cookies cool for several minutes before moving them to a wire rack.
